TASTING NOTES
A BLANC DE BLANCS THAT EPITOMISES ITS TERROIR WHILST STAYING TRUE TO ITS VARIETAL. Appearance, delicate effervescence and a yellowy green hue that reveals a high proportion of chardonnay and suggests a certain maturity. Nose, expansive aromas of stewed yellow fruit and honey with an underlying chalkiness which lends extra personality and originality to this blanc de blancs champagne. Palate, a lively attack; elegant, direct and full of favour. The restrained dosage allows the minerality and firm texture of the wine to shine through. The finish concludes on a pleasant note of chalkiness. Service, a fairly wide tulip glass is recommended to appreciate the body of this blanc de blancs. An excellent match with meaty fish such as sea bass, monkfish or mullet. |
